Kyrlon spray matte finish is the best that I have found. If I want an area to be "shiney", then I go back over it with a brush on gloss sealer (Folk Art, Apple Barrel, etc.) to bring back the shine.

I usually do Future floor polish before and after painting.  Then a mat spray sealer.  The Future gives you a clear acrylic glossy coat that will go mat in time.  It protects the model like a champ....
